Make ahead meals for the freezer
I am only going to be brief on making meals ahead of time because there are many sites already dedicated to doing this on the Internet and they have good, detailed information.
Below are two web sites on making meals and then freezing them along with several books. They all have the details necessary on preparing meals to freeze. I have reviewed and used the websites and have read the following books. All were very helpful and I would recommend any of them; however, you only need to read one of the books or websites to understand the steps in preparing meals along with what will and won’t work with Make Ahead Meals.
I just like the feel of books and the information is available even if the power goes out.

You will want to plan the recipes ahead of time so you know the order of preparing the meals & what to buy. A program such as Cookn’ Delux is wonderful for meal planning and creating menus, as well as shopping lists based on your meal plan.
It is important to do the shopping, chopping and slow cooking the day before or you will not have enough time to make the meals on the day you want to cook.

I have 2 plans now for making this happen.
In the summer I hate to cook so I only cook my meats and then make very simple meals.
In the winter I cook crock pot chicken soup starter (for chicken soup, chicken & rice, or chicken dumplings), Beef stew starter (for anything beef), lasagna and meats that I add to other dishes.

I also take the approach in the winter of making more than 1 meal if I am making something that can be frozen. I don’t do all of my cooking in 1 day. If I am making lasagna I will make 3 or 4. If I am frying my meat, I buy in bulk and cook it all and then portion it out for other meals. etc.
